SITXFSA001 – USE HYGIENE PRACTICES FOR FOOD SAFETY

This course provides participants with the skills and knowledge to use personal hygiene practices to prevent contamination of food that could cause food-borne diseases. The training is applicable to all organisations with permanent or provisional kitchen premises or smaller food preparation or bar areas.

 At the conclusion of this course, a participant will be able to:

  • Identify and remove food hazards and report as appropriate for follow-up.
  • Report any personal health issues likely to cause a hygiene risk and cease participation in food handling activities where own health issue may cause food contamination.
  • Prevent food contamination from clothing and other items worn.
  • Ensure hygienic personal contact with food and food contact surfaces.
  • Use hygienic cleaning practices that prevent food-borne illnesses.
  • Learn to wash hands correctly and at appropriate times using appropriate facilities.
  • Receive a Statement of Attainment for SITXFSA001 – Use Hygiene Practices for Food Safety

 

Candidates will require the ability to read administrative paperwork and communicate verbally in a team or to supervisors.


Materials to bring to the course:
Pen and notebook. Drink bottle and lunch (should you wish to consume a home-made lunch)

Dress code: Smart casual closed toed shoes.

Site: The course can be delivered onsite – commercial kitchen required, or it can be delivered at the Little Kitchen That Could – 90 Montague Street South Melbourne

Length of the course: 1 x day

Price: $100 per participant

Minimum participants per course: 10

Prepare and Serve Espresso Coffee

SITHFAB005 – PREPARE AND SERVE EXPRESSO COFFEE

This nationally recognised course provides participants with skills and information on how to extract and serve espresso coffee using commercial espresso machines and grinders.

At the conclusion of this course, a participant will be able to:

  • Operate espresso machine with some level of independence and under limited supervision,
  • Prepare espresso machine and grinder for service,
  • Select coffee beans and grind to appropriate particle size,
  • Provide information and recommendations about types of coffee beverages, accompaniments and take orders,
  • Texture milk according to type of milk and coffee beverage,
  • Present coffee beverages attractively and without drips and spills,
  • Clean espresso machine and equipment thoroughly and safely and refer faults to supervisor.

Pre-requisite: Participants need to have completed SITXFSA001 Use Hygiene Practices for Food Safety

Responsible Service of Alcohol (RSA)


Victorian Commission for Gambling and Liquor Regulation (VCGLR) Certificate.

Responsible Service of Alcohol (RSA) training gives people working in licensed venues the skills and knowledge to ensure safe and responsible licensed premises. RSA training is mandatory for licensees and staff selling, offering or serving liquor for general, on-premises, late night and packaged liquor licences.

Course duration: 4 hours.

 Materials to bring to the course: Pen and notebook. Drink bottle and snack (if desired).

Dress code: Smart casual with closed-toed shoes.

Site: Course can be delivered onsite in a classroom. The trainer will require access to internet and a PC/laptop to show educational videos as part of the course. The course can also be delivered online.

Length: 4 hours

Price: $60 per participant

At the conclusion of the course, students are required to complete and pass a 30-minute mandatory assessment following which they are issued with the Victorian Commission for Gambling and Liquor Regulation (VCGLR) Certificate.

Minimum participants per course: 10

Candidates will require the ability to read, write answer questions based on the course and communicate verbally in a team or to supervisors.
